In conjunction with Fatboys Catering, as part of a major refurbishment, Exclusive Ranges spoke directly to the chef about moving from a full gas range to a total induction solution. David Campbell and his team had to work in an environment that had a considerable build-up of heat in the kitchen. Any new cooker had to be able to cope with the demands of the food served across the Hotel in the fine dining restaurant, the bar, during functions and for room service. The team of chefs were working in a classic Georgian building that was never designed to accommodate a hotel kitchen so there were structural and spatial restrictions yet we were to bring an element of modernity to the operation.

Today

Twelve months after this five star multifunction kitchen retired its twenty year old Rorgue cooker, and there have been no regrets.  The new Menu System cooker has enabled the chefs to have a better working environment and reduced the amount of time they spend cleaning at the end of their shift.  Whilst we suggested a decrease in the size of the cooking island, by including more efficient induction hobs and griddle plates, we were able to reduce the amount of pan work done and the total number of appliances needed.
