Exclusive Ranges and Menu System are very proud to have played a part of one of the biggest restaurant openings of 2016 but had a very exacting brief to fulfil; to incorporate specific equipment into the range, including robata grills, a dim sum steamer, tempura fryers and wok cookers, that would enable the production of a high class, oriental menu, using Swiss engineering and fabrication. There had to be full service refrigerated storage throughout, alongside ovens and general storage, and the kitchen was to be open and on full display to the restaurant so it had to look the part as well be functional.
There was also to be a basement kitchen that would serve as part of the production ‘engine room’ of the restaurant and a major component of this was to be a Menu System range that incorporated production equipment and combination ovens. The overall size of the job; three ranges on the ground floor and one in the basement, makes this one of the largest single projects that Menu System has worked on.

Sexy Fish was all about the visual finish and as the fourth project for Caprice Holdings, and the eighth cooker installation for them by Menu System, we were keen to show diversity and capability. It was the first real display kitchen that Menu System had made and certainly the first with coloured panels. It was also the first totally open kitchen for Caprice Holdings and a unique project for the Swiss factory to have to work on, integrating oriental equipment into a traditional range. As the main range measures 10m in length, it is the longest Menu System cooker in the UK. It looks amazing AND it works; the coloured panels and complementary lighting matches the mood and styling in the restaurant and the décor has certainly attracted the right level of publicity.
